Problems related to raw materials that are often experienced by companies are determining the right amount of inventory as happens in XYZ. Ordering raw materials at XYZ still uses traditional methods or only uses estimates in ordering raw materials and does not have a certain method of organizing raw material inventory so that the ordering of raw materials made becomes unstable. This shows that it is necessary to control the inventory of raw materials for wheat flour and sugar which are the main raw materials used in XYZ. This study aims to optimize the planning and control of raw material inventory of wheat flour and sugar at XYZ using Monte Carlo simulation and probabilistic Economic Order Quantity (EOQ) method. Monte Carlo simulation and probabilistic EOQ are more suitable for XYZ due to the dynamic nature of operations variability in demand lead time uncertainty and the need to balance storage and procurement costs. Monte Carlo simulation helps predict various scenarios that may occur while probabilistic EOQ provides a way to optimize the amount of raw material ordering which makes the combination more adaptive in uncertain situations such as those faced in the food service industry. The results showed that the estimated use of wheat flour raw materials in the next period was 244 893 kg per year while sugar raw materials reached 175 159 kg per year. The probabilistic EOQ calculation produces an optimal order quantity for wheat flour raw materials of 19 kg per order with a safety stock of 1 kg so that the maximum total storage reaches 21 kg and the reorder point is 2 kg. For sugar raw materials the optimal order quantity is 16 kg per order with a safety stock of 1 kg a maximum total storage of 18 kg and a reorder point of 2 kg. The implementation of this method is able to reduce the total inventory cost with savings of Rp. 410 200.00 (35%) for wheat flour and Rp. 50 400.00 (7%) for sugar compared to the current inventory system.
